Job Description:
- Steam
 - Checks thawed products are enough for the today’s consumption.
 - Practices First In First Out (FIFO).
 - Monitors water level in the high pressure steamer time to time.
 - Serves products according to SI (Special Instruction) as requested.
 - Logs the temperature reading of gas and water.
 - Accounts and packs wastage properly.
 - Backs up enough items or ingredients needed such as:
 - Peeled quail eggs
 - Shredded ginger
 - Sliced ginger
 - Shredded & sliced spring onion stalk
 - Spring onion leaves
 - Carrots and red bell pepper
 - Standard cutting/ slicing must be followed.
 - Observes the following:
 - Food safety
 - Accuracy of ingredients
 - Critical control point/s
 - Cooking procedures
 - Texture
 - Taste
 - Appearance
 - Aroma
 - Temperature
 - Cooking time
 - Fry
 
- Monitors oil level in the deep frylator time to time
 - Organizes portioned, opened- packs properly
 - Acknowledges calls for MTO (Made To Order) products
 - Acknowledges calls for SI (Special Instructions)
 - Achieves standard cooking time for all MTO products
 - Practices the 30- minute frequent proper hand washing
 - Turns off the exhaust and fresh air properly
 - Conducts station inventory (physical) count accurately
 - Thaws products based on tomorrow’s forecast
 - Endorses the exact quantity of the wastage to Manager
 
- Noodles
 - Ensures that cold storages are meeting the standard temperature
 - Cleans all the following utensils and equipment of the station
 - Baffle filter
 - Stainless wall shelf
 - Preparation table
 - Digital food thermometer
 - French/ Chinese clever knife
 - Fine mesh skimmer
 - Conducts station inventory (physical) count accurately
 - Accounts and packs wastage properly
 
- Rice
 
- Prepares products according to the following standards:
 - Food safety
 - Accuracy of ingredients
 - Critical control point/s
 - Cooking procedures
 - Texture
 - Taste
 - Appearance
 - Aroma
 - Temperature
 - Cooking time
 - Practices “cook less more often” principle consistently.
 - Performs rapid cooling for LO properly.
 - Records the temperature reading of gas and water.
 - Conducts station inventory (physical) count accurately.
 - Accounts and packs wastage properly.
 - Endorses the exact quantity of the wastage to Manager.
