COHARA or Cagayan de Oro Hotel and Restaurant Association's annual Culinary Show and Live Competitions "Kumbira" has been launched last July 3, 2019 as Kumbira Masters at the Activity Center of Ayala Centrio Mall.
It is now being called Kumbira Masters because this time the competition will be level up, where participants will go through several rounds of competitions that will test their skills and knowledge in culinary as a test of a true masters of culinary.
To promote the Food Baskets or cuisines of Brunei, Indonesia, Malaysia and the Philippines (BIMP) and also the flavors and regional recipes of the Island of Mindanao. Kumbira is now on it's 23rd year, it has been one of the core activities annually during the Higalaay Festival and it is now known as the biggest culinary show and competition in the Philippines.
This year, it will be held from August 14-16, 2019 at The Atrium of Limketkai Center. There will be exhibits and cooking demo featuring the foods of Brunei, Indonesia, Malaysia and the Philippines - BIMP and of course the local foods of the region and some parts of Mindanao by appreciation and application of indigenous ingredients in local recipes. It also aims to hone culinary skills and introduce new techniques and technologies in developing local cuisines
Some features of the Kumbira Masters this year are competitions in culinary, bar and barista with 2-3 rounds competitions to win as Kumbira Master. It will be categorized in 3 mastery - the Chef Master, Bar Master and Latte Artist.
There are also Master classes to be held in partnership with the National Food Showdown, a lecture and demonstraion by renowned chefs and culinary masters with topics such as: Introduction to Philippine cuisine, soups, stocks and sauces, cookery techniques and few more.
On the competition events for professional/student category, it will be categorized in the following competition events:
Culinary Challenges - Includes Kumbira Chef Master, Klasika Kulinarya and The Filipino Carver for the Live competition, and Creative Ham Garnishing and Pika-pika Platter for the Display Competition.
On the Pastry and Dessert Category are the Plated Mango Dessert and Cake Decorating both are for the display competition.
For the Dining Service category, it will be Fiesta Buffet Table Setting for the display competition and Bamboo Floral Centerpiece for the live competition.
There are also competition events for Junior/Kiddie division for Culinary Challenge, Pastry and Dessert, Beverage Service and a lot more. There are also Brand Competitions for Solane Kitchen Hero Chefs Edition and Del Monte Set Menu, both are live competitions.
